This is a bit complicated because it has three layers, but the end result is oh so very good that it's worth it. None of the steps are as complicated as it looks like they might be.

BASE -
2 squares unsweetened baking chocolate
1 stick butter
2 eggs
1 cup sugar
1 cup flour
Chocolate chips (optional)

FILLING
1 small bag flaked coconut
1/2 can condensed milk
2 eggs

TOPPING
1/2 bag chocolate chips
1/2 can condensed milk

ESSENTIAL TOOLS
Microwave-proof mixing bowl
Microwave oven
disposable rectangular foil cake pan.

STEP ONE - MAKE THE BASE
Turn the oven on to 350F. Melt the butter and chocolate in a microwave-proof mixing bowl.
Add the eggs, then mix in the other ingredients and spread them in a rectangular foil baking pan.
Bake for 10 minutes.

STEP TWO - THE COCONUT
Open your condensed milk and mix half the can with the coconut and eggs. Take the base out of the oven and spread the coconut mixture on top of it. Put it back into the oven and bake it for another 10 to 15 minutes.

STEP THREE - THE FUDGE TOPPING
Mix the second half of the condensed milk with the chocolate chips and melt them in the microwave for 2 minutes on 50% power.
Stir it together well. It'll be kind of fudgy and thick.
Take the slice out of the oven again. Spoon the fudge onto it in small dollops.
Wet your fingers under the tap and smooth the fudge out to cover up the coconut. Careful - it's hot!
Put the slice back into the oven yet again and bake it until a skewer comes out clean (about another 10 minutes.)

This is not 'pretty-pretty' recipe, but it is oh so very good.
